[Walking at the grass-roots level in the Spring Festival] Take a bus every 8 minutes and walk 6 kilometers underground every day … to guard the safe railway "dredging team"

Cctv news(Reporter wanglili): In less than 8 minutes on average, there will be a series of "iron dragons" full of goods whizzing by in the Jinci Tunnel in the southwest of Taiyuan, Shanxi.

As the throat passage of bulk cargo in Shanxi and train transportation between China and Europe, the southwest ring railway line has a total length of 53.64 kilometers, of which more than 20 kilometers are underground tunnels, which pass through many rivers and ditches, and silt and garbage often block drainage ditches.

During Spring Festival travel rush, a group of railway "scavengers" worked in the underground tunnel. They walk 6 kilometers every day, wading through the cold sewage, discharging silt and dredging, and guarding the operation safety of freight trains from south to north.

Martin and his eight workmates, who work in the bridge and tunnel workshop of Taiyuan Works Section of China Railway Taiyuan Bureau, undertake the daily drainage and dredging work of Jinci Tunnel. Walking along the tunnel for a few minutes, experienced Martin stopped following the sound of running water, bent down and fell to the ground, uncovered the concrete cover plate of the drainage ditch next to the line with tools, leaned into the narrow drainage ditch and used a flashlight to check the situation inside.

"The mineral content of groundwater here is particularly high. Just like our kettle, the scale will accumulate thicker and thicker." Martin said that once there is a drainage blockage in the tunnel, if it is not cleaned in time, it will lead to flooding lines and affect driving safety.

Going on for tens of meters, there are sundries floating on the muddy sewage in the ditch, emitting a pungent smell. At this time, Zhang Ligang of the bridge and tunnel workshop of Taiyuan Works Section of China Railway Taiyuan Bureau skillfully put on plastic waterproof clothes, stepped into the sewage that had not passed the calf with his feet, and shoveled the mud into the woven bag with a shovel. When encountering a place that is difficult to dredge, he can only roll up his sleeves, bend down and curl up in a narrow space, and dig out with his hands.

Zhang Ligang said: "If you want to find the blocked drainage ditch in the tunnel, you can only lift the board piece by piece." Although they are all wearing waterproof clothes, biting sewage will still seep into their clothes, and their arms will be swollen and unconscious after a long time.

With the removal of silt and debris, the sewage level began to drop and the water flow resumed smoothly. After a deposition point was cleared, the workers continued to "patrol".

Due to the particularly high traffic density in the driveway, the time left for workers to work is very tight. In addition to racing against time to clear up silt, they also have to avoid speeding trains from time to time.

During their stay in Spring Festival travel rush, they walked 6 kilometers a day, bent over, dredged canals and removed silt, and cleaned up 36 places /15 cubic meters. This seemingly simple work content, everyone has to repeat it hundreds of times, they use a dirty suit, in exchange for the smooth drainage of the tunnel, to ensure the safety of the train.

Sichuan famous dish Bangbangji is a delicious dish made with a stick.

  □ Yike text/map

Bangbangji, a dish that makes people’s index fingers move. Hanyang, an ancient town with lingering charm. Now, whether it is "Shancheng Bangbangji", "Chengdu Bangbangji" or "Leshan Bangbangji", it will be indicated that this dish originated in Hanyang Town on the Minjiang River in Qingshen County a hundred years ago.

Standing a hundred years later, we reread history and feel a kind of historical chance and coincidence. Hanyang is to Bangbangji or Bangbangji is to Hanyang, and the relationship between them has long been inseparable.

  one

  Sichuan cuisine "Bangbangji"

Named after the stick hitting the food.

When it comes to "bangbangji", many people know that it is one of the eight major cuisines in China — — A century-old famous dish in Sichuan cuisine. However, little is known about how "stick" and "chicken", two seemingly unrelated things, are related.

Looking through the historical materials, it is not difficult to know that before the appearance of bangbangji, there was a precedent in the cooking history of China to link bangbangji with food.

As early as more than 1,400 years ago, an agronomist named Jia Sixie wrote a famous book. In this comprehensive agricultural book named Qi Min Yao Shu, a delicious food made of wooden sticks was recorded in detail — — White breast. The method of preserved white meat is to choose lean meat of cattle, sheep, roe deer, not fat, cut it into pieces, soak it in cold water until the blood is clear, then put salt water and pepper powder into water to soak the meat, soak it for two nights and take it out to dry. When the meat is half dry and half wet, gently hit it with a wooden stick to make the meat firm.

As for the practice of "white breast", until the Tang Dynasty, some people relayed Jia Sixie’s records word for word when writing books. Today, this once-popular snack "Bai Fu" has faded out of people’s taste in the years, but its practice of hitting food with a stick always makes people involuntarily think of the delicious food that followed, which is also related to sticks — — "great chicken"

How did the great chicken get its name? Is it the same as white preserved fruit, which needs to hit the food gently with a stick before it is cooked, so it has something to do with "stick"? If both of them use the workflow of beating the food with a stick before cooking, then is it the same as the intention of white breast to make the meat firm?

At present, Shancheng Bangbangji, Leshan Bangbangji and Chengdu Bangbangji … … Many bangbangji with local names have sprung up like mushrooms after rain. Where is the birthplace of bangbangji? What is the reason for this place’s great chicken to be famous?

  2

This dish originated from the green god Hanyang.

A small town thriving on water.

In many books on Sichuan cuisine, whenever we mention "Shancheng Bangbangji", "Chengdu Bangbangji" or "Leshan Bangbangji", it will be noted that this dish originated from Hanyang Town on the Minjiang River in Qingshen County before the Ming and Qing Dynasties. As for why Bangbangji originated in a little-known town and why it became famous, there is no historical data to explain it exactly.

Out of Qingshen County, walk south along the Minjiang River. After about 20 kilometers, the river gradually narrows, and a small town with a rich and quaint style appears in front of you. As far as you can see, it is full of gray tiles and old closed wooden houses. Perhaps it is because the weather is too cold, there are few pedestrians on the road, and the town is a little lonely and depressed.

When I got off the bus and walked a few steps forward, I saw three or five elderly people in a teahouse by the road, and I vaguely heard a catchy folk proverb — — "Poor green spirit, rich Hanyang, want to play a Liujiachang … …” As far as the first six words are concerned, a series of questions inevitably come to mind: why does a small town want to be richer than the county? Why does it have such amazing confidence and pressure on Qingshen County? It turned out that this Hanyang town was originally an arc-shaped flat dam along the Minjiang River, and later it became a market town because of water, and it was beautiful for a long time in history because of a Millennium water pier in the town.

In the era of "it is difficult to get through the Shu Road, and it is difficult to get into the sky", the land traffic in Sichuan is blocked, and the Minjiang River waterway has naturally become an important mode of transportation to travel inside and outside Sichuan. When the merchant ships traveling between Chengdu and Leshan arrive at Pingba, they just catch up with the dusk and the night. In addition, Pingba has to pass through a steep gorge area of 3 kilometers to the south of Leshan. The walls in the gorge are towering, the rocks are numerous, and the rivers are circuitous. All merchant ships are shocked by its mystery. Pingba has an open terrain, which is convenient for boats to dock. It just caters to the needs of merchants and ships wandering on the Minjiang River water shipping line to find a place to rest and relieve the fatigue and burnout of a day’s travel.

Day after day, year after year, merchants’ ships docked at Pingba, which turned the ordinary Pingba into an important transit point on the waterway transportation trunk line between Chengdu and Leshan, and gradually evolved into a cargo distribution center for waterway transportation between Chengdu and Leshan. Shuttle boat Ge, raising sails and lowering sails, raising oars and collecting oars, people come and go, bustling, really lively.

By the Han Dynasty, Pingba had its own name. A family named Yiyang opened a shop in the dock near the river. Since then, the family’s business has flourished and the population has been strong, gradually forming a market town. Pingba became a market town because of the Yang surname in Han Dynasty, so it was slowly called Hanyang Town.

In the story of the old people, Hanyang is prosperous and rich. It is not difficult to see that in the impression of the older generation, Hanyang is not only a small town, but also a land of wealth.

Eating peanuts grows up and tastes delicious.

Hanyang chicken is as famous as "Yayu"

The old people said that Hanyang was born of water, and everything in Hanyang was born of water. There are three local products in Hanyang, which can be summarized by two folk proverbs — — "Hanyang peanuts Hanyang chicken, Hanyang Jiangtuan flies."

Hanyang is the export of Pingqiang Small Three Gorges, which is known as the "fish nest" and the hometown of Jiangtuan, a rare species. Jiangtuan is a good fish with tender meat and delicious taste. It is a pity that the Jiangtuan is becoming increasingly rare and endangered, and the scene of Jiangtuan being exported by air has long since disappeared.

However, Hanyang peanuts and Hanyang chickens have always been there. Hanyang is a delta region formed by the alluvial of Minjiang River, with soft soil, which is most suitable for planting peanuts. Peanuts planted in Hanyang Town are not only large in size, high in yield, but also delicious. When harvesting peanuts, there are always some residual peanuts scattered in the soil, and worms will grow after a period of time. At this time, Hanyang people always put their chickens into the ground and peck at peanuts and insects in the soil. Hanyang chicken is open in the wild, eating fresh peanuts, etc., and it is more shiny and bright, and its meat is more delicious. It is also this unique feeding method that makes Hanyang Chicken quite famous, thus leaving the good name of "Hanyang Chicken with Jia Rotten Yayu".

The raw materials used in Bangbangji are carefully selected from these Hanyang chickens. In a restaurant featuring bangbangji in Hanyang Town, juniper and cypress are slowly cleaning the tools for making bangbangji in the kitchen. As early as the forties and fifties of last century, his grandmother had been cooking a great chicken in the town, and she had been familiar with it since she was a child.

Juniper said that the most critical link in making a great chicken is to choose the ingredients. The meat of Hanyang chicken is tender and plump, which is the main reason why Hanyang bangbang chicken is the most popular. Among the many Hanyang chickens, the local cock over seven or eight months old is the best raw material.

The production method of bangbangji is very particular and has no skill. Slaughter the rooster, remove its hair, viscera and wash it. Wrap the legs and wings with hemp rope, punch holes with bamboo sticks where the meat is thick, put it in a boiling water pot and cook it slowly for a quarter of an hour with slow fire, and add half a scoop of cold water. When the water boils again, turn the chicken over and cook for about 10 minutes, then add half a scoop of cold water. When the water is boiled, turn it over, pierce the chicken with a small bamboo thorn, pick it up when there are no blood beads, soak it in cold boiled water for 1 hour, and take it out to dry. Slaughter the head of the chicken, neck, wings, chest and back in different parts, cut the head of the chicken into two pieces, and gently tap the back of the knife with a special wooden stick to cut the rest. When eating, mix red pepper, sesame powder, pepper powder, sesame oil, Tricholoma, soy sauce, sugar, chopped green onion, monosodium glutamate, etc. into juice, and then dip it in.

It is Hanyang Bangbangji, a special dish, that attracts tourists from both inside and outside the province. Most of them come from Chengdu, Leshan, Ya ‘an and other surrounding areas, but many of them come from Beijing and even foreign countries.

Chicken sold at the water pier

Eating with relish and leaving with love.

"Bangbang" and "Chicken" seem to have nothing to do with each other, but they are closely linked because of the cooking technology of this delicious food. So, for what purpose, do you have to beat chicken with a stick? How is it different from the practice of beating the white breast with a stick?

Lei Guangqian, director of the Party and Government Office of Hanyang Town, explained the ins and outs of Hanyang Bangbang Chicken.

As early as when the land traffic was underdeveloped, the traffic in Sichuan mainly depended on water transportation, and Minjiang River was an important waterway in Sichuan. From Chengdu to Leshan, Hanyang Town has always been an important transit point. Every day, ships come and go in an endless stream, and boatmen and pedestrians are bustling. Because of the large flow of people, there are some people with more economic minds who have set up a way in Hanyang’s water wharf — — Selling snacks to passing ships and pedestrians.

What are you selling? Of course, it is a local specialty of Hanyang, and the cost is low. As a result, vendors began to sell chicken to ships, and each person could sell several chickens every day. Chicken is slaughtered into small pieces and put in a bowl. The bowl is filled with seasoning juice and soaked with chicken. Every time a guest eats a piece, a piece is recorded. After eating, the money is calculated according to the number of pieces of chicken eaten. Since the price is calculated by the block, it is necessary for vendors to cut the chicken evenly. In order to cut the chicken pieces evenly, the vendors came up with a way, that is, aim the knife edge at the chicken body position, and then hit the back of the knife with a special stick. Later, Hanyang chicken nuggets were also called "great chicken".

For those pedestrians who are tired of traveling by boat, Hanyang chicken, which grew up eating peanuts on Hanyang Dam, is tender and delicious, and it is spicy and spicy, so they all love it and leave it. However, things born of water, without water, are doomed to be unsustainable. After the completion of the highway from Chengdu to Leshan, the water shipping in Chengle gradually became depressed, and the reputation of Hanyang as a "great chicken" gradually cooled down.

Today, in Chengdu, Leshan, Chongqing and other places, Bangbangji presents a prosperous scene of "blowing open the petals of ten thousand pear trees". In order to make it taste better, caterers constantly transform it, and the pricing method is no longer priced by pieces, but by the number of shredded chicken. It is no longer necessary to beat the back of the knife with a stick and cut it into pieces, but there are still some restaurants that, in pursuit of the unique taste of hand-torn chicken, pat the chicken loose with a wooden stick after cooking it. Although this beating has changed the original way, it is still called "stick chicken".

Is it okay to open the skylight after it rains?

When driving in rainy days, it is not recommended to open the rear sunroof. This is because doing so may cause damage to the electronic control mechanism of the sunroof, and may also cause rainwater to enter the car, thus damaging the electronic system in the car.

The skylight of a car is a convenient function, but improper use may cause damage to the car. Therefore, when driving in rainy days, it is best to close the skylight to prevent rainwater from infiltrating into the car. In addition, be careful not to turn on the external circulation of air conditioner in rainy days, because this will lead to water in the car, which will affect the air quality and health in the car.

If you are not sure whether you can open the sunroof, it is recommended to check the owner’s manual of the vehicle or consult a professional technician. They can provide more specific suggestions to ensure that your vehicle is in good condition when driving in rainy days.

In a word, when driving in rainy days, we should pay attention to protecting all parts of the vehicle to ensure its normal operation. Closing the skylight and avoiding opening the external circulation of air conditioner are important measures to protect the safety of vehicles and passengers.

Why do pineapples in this town hang all over the country?

Original old artist jiuhang

When it comes to "pineapple", Cantonese people will definitely think of Xu Wen.

Isn’t it? Old artists have also written about Zhanjiang County, occupying the title of "the first pineapple county in China" with a 370,000-mu "pineapple sea". But Guangdong has always been a "big pineapple producer". Besides Xuwen, the largest pineapple production base in the country, sweeter pineapples are hidden in the depths of the county, such as Zhongshan Shenwan.

△ Zhongshan Shenwan pineapple. /worm

Compared with the famous Xuwen pineapple, the old artist thinks it is the pineapple in the town that is more worth digging. It is a pity that they are sweet, crisp and slag-free, but they are silent and unknown, hidden under the "pineapple sea"

In Twelve Fronts, Shenwan pineapple in Zhongshan is called "the most rich sweetness". Pineapple is a kind of fruit that can be described as "love and hate" for old artists. What they love is sweetness, and what they hate is that if they eat too much, they will get numb, which is commonly known as "damp heat" in Guangdong. However, Shenwan pineapple is actually called "no need to soak in salt water", sweet and residue-free, and all that is left is the fruit handle, so my spirits come.

Why don’t you go and meet this legendary pineapple yourself?

Shenwan pineapple is absolutely sweet.

Compared with Xuwen, Shenwan pineapple, which grows on the zhongshan town, is much less famous. Not to mention mainlanders, even Cantonese people only know that there are squab, crispy meat carp and Xiaolan chrysanthemum banquet in Zhongshan, but they don’t know that there is Shenwan pineapple.

It’s no wonder that they, after all, Shenwan, a mysterious town, is very remote. Open the map of Zhongshan, and you will find that it is located in the south of Zhongshan City, bordering Modaomen Waterway in the west, and the Xijiang River estuary is just one foot away from tanzhou town to Zhuhai. However, it is precisely because of the geographical characteristics of being close to the estuary, sandy soil and strong sunshine that the old artists are more curious about Shenwan pineapple.

After entering the town, I saw several pineapple stalls without accident, which really deserves to be called "pineapple town".

△ Pineapple stalls can be seen everywhere on Zhongshan shenwan town. /Author for the picture

Although May is not the best time for pineapples, the air in shenwan town still smells sweet of pineapples. For pineapple, a fruit with a long growth cycle (1.5-2 years), local people will plant it in different seasons to ensure that it can be produced all year round.

Shenwan town faces the sea with its back to the mountain, but Yaji Mountain, which is only 300-400 meters above sea level, is the most important pineapple planting area. From the foot of the mountain to the top of the mountain, all kinds of pineapples are densely planted.

The old artist found that no matter in front of the house, on the flat or on the hillside, it can be a place for people in Shenwan to grow pineapples. "The best pineapples grow on the hillside." The farm owner told the old artist, "Although pineapples look ordinary, they are very delicate, and they are only made twice in three years. It takes at least one and a half years for each pineapple to grow to maturity. If you want to taste delicious, you need slope, water, soil and light conditions, but they grow on the mountain.

According to the boss, the pineapple in Yaji Mountain looks rough and yellow, but it is rich in iron. Coupled with the spring water from Yaji Mountain, Shenwan pineapple is so sweet.

△ Pineapples growing on Yaji Mountain. /Author for the picture

If you want to eat sweet pineapple, the more golden the fruit looks, the better. According to tourists from Zhongshan City, in May every year, even the green skin of Shenwan pineapple is sweet, and the sweet smell of pineapple at home can float all over the room. Although pineapples are produced all year round, the best ones are only from May to September.

With aunt’s skillful knife cutting, a complete Shenwan pineapple has been placed in front of us. Just looking at the pineapple with its coat off, you can’t see any difference between the pineapples you eat in peacetime, but before it is served, the smell of pineapple that has poured into your nose tells you that there is something really.

"Soak the pineapple in salt water before eating", which is completely ineffective in front of Shenwan pineapple. It doesn’t even need a bamboo stick. Just grab the small fruit handle and bite it. Oh, my mouth is like a pineapple-flavored perfume, which is sweet to my heart.

△ Shenwan pineapple, ready to eat with the handle.

The boss listened to my compliment, but his face was saddened: "If you had come two months earlier, it would have been so sweet that it could hardly be described." Although I can’t eat the pineapple in May, that bite just now is still the best pineapple that the old artist has eaten this summer.

There are 16 words commonly used in the outside world to summarize the characteristics of Shenwan pineapple: golden flesh, sweet and juicy, rich in honey, crisp and slag-free. Old artists still feel that it is not accurate enough. In Cantonese, it is said that "pineapple tastes like pineapple". Only after eating Shenwan pineapple do you know that this sentence is the highest praise. From the sense of smell, it is rich and fragrant enough, the entrance is sweet, without a trace of acidity, and the juice is full but will not overflow. You can always eat the fruit stalk from the tail without any numbness.

With the pineapple, the town finally appeared.

From "relying on water to draft" to "relying on mountains to eat mountains"

If it weren’t for pineapples, people might know nothing about Shenwan. Indeed, it is just one of the 15 towns under the jurisdiction of Zhongshan, and even Zhongshan locals may "only hear its voice, but not its appearance."

However, it is indeed possible that Shenwan is "blessed by God". It is surrounded by mountains on three sides, with Modaomen Waterway (the mouth of Xijiang River) in the west, with mountains, water and flat land each accounting for one third. It has two islands in the center of the river, Modaodao Island and Zhupai Island. Such a geographical environment is destined to be a natural harbor. According to legend, the place used to be hit by typhoons, and only the ships sheltered here were safe and sound. The boat people thought that there was a god’s shelter, so they built a temple to worship it and called it "Shenwan", which has been used since the town was built.

△ Overlooking Shenwan from Yaji Mountain, mountain, water and flat land each account for one third. /worm

Before planting pineapples, people in Shenwan lived on water. The population of shenwan town is mainly composed of Guangfu people, Hakkas and Yi people. Guangfu people live on the flat land, Hakkas live at the foot of Yaji Mountain, and Yi people live along the Modaomen Waterway. Because it is located at the junction of salt and fresh water at the mouth of the Pearl River, the fishery in Shenwan is very rich. The villagers were born in rivers and seas and lived in boats. Their unique living space closely linked their lives with rivers and seas.

One of the characteristics is that people in Shenwan eat rice worms. The insects in Shenwan are a must in Guangdong, and Qu Dajun recorded in "Guangdong New Talk" that "in summer, when it rains, the insects are born by steaming in the grain … The mature insects in first frost are also ripe. On the twelfth and sixteenth days of the first lunar month, they broke out in the spring tide and floated on the fields. If you take it from the net, the vinegar will be white pulp, filtered with white rice bran and steamed into paste, which will be sweet and beneficial to people and cover the essence of rice. " In the eyes of Shenwan people, insects are plump and rich in protein. No matter whether they are fried with ginger and scallion or baked with rice, they are local specialties.

You know, insects have high requirements for the environment. Nowadays, in the Pearl River Delta, only Zhongshan Shenwan and some beaches in Tanzhou, Zhuhai Doumen and Jiangmen Xinhui can produce insects. It is conceivable how high the soil and water in Shenwan are, and Shenwan people also take "relying on water to draft" to the extreme.

△ There are fewer and fewer beaches in the Pearl River Delta that can produce grass insects. /worm

△ Shenwan Potted Rice Worm.

But don’t forget, water only accounts for one third of Shenwan, and there is another third, mountains.

Yaji Mountain, which is only 300-400 meters above sea level, is the highest peak in shenwan town. Because it looks like a bun on a girl’s head from a distance, it is named "Yaji Mountain". This was an ordinary mountain. It was not until 1915 that Li Guohan, who lived in Peru, brought back a pineapple seed, which made Shenwan, in addition to "relying on water to eat water", have to add a "relying on mountains to eat mountains".

No one could have imagined that the sandy soil mixed with red and yellow in Yaji Mountain turned out to be a good hand in planting pineapples. In the 1920s, Li Guohan planted a new kind of pineapple on the back of the old village at the foot of Yaji Mountain, and with the blessing of mountain spring water, slope and sunshine, the pineapple planted here was extremely sweet, crisp and slag-free. Since then, almost every household in Shenwan has planted pineapples. Today, nearly 3,600 acres of pineapples have grown in this 60.9 square kilometer land in Shenwan.

△ From "relying on water to draft" to "relying on mountains to eat mountains". /worm

The owner of the self-tour farm told the old artist: "In the best time, you can produce 1,500-1,800 pineapples per mu on the sloping land and 3,000-4,000 pineapples per mu on the flat land. After picking pineapples, tourists can also carry out a series of activities such as making pineapple bags and squeezing pineapple juice. "

People in Shenwan are undoubtedly lucky. From "eating by water" (insects) to "relying on mountains" (pineapples), the "mountain and river culture" of Shenwan can best be reflected in this point.

"Hey, a dish of pineapple fried rice."

Pineapple has been rooted in the DNA of Shenwan people, and their lives are inseparable from pineapples of all sizes. In addition to raw food, Shenwan pineapple is also very suitable for cooking, because it is sweet enough and the taste will not be sour. The knowledgeable Cantonese chef will use Shenwan pineapple.

In "Twelve Flavors", Nicholas Tse made a "pineapple and sweet meat" with Shenwan pineapple, which may be a classic dish that every grandmother in Guangdong must master.

△ pineapple meat.

"Sweet and sour pineapple meat" is known as the "rice killer" with its crisp taste. Only those who have eaten it know how hard it is to stop. Dice the pineapple and pork tenderloin, cut the green pepper into pieces for later use, wrap the pork tenderloin with egg white, roll the flour, put it in a hot oil pan, fry it until it turns golden and discolored, take it out, mix a sweet and sour juice, evenly wrap each piece of sweet and sour meat, and finally add the pineapple and green pepper pieces to stir fry together. The sweet and sour fragrance rushes to the tip of the nose, and the mouth is crisp, and the pineapple bite is neither greasy nor "heavy", but it feels like lightness.

Pineapple is not only a pair of "matchmakers" with pork, but also with chicken, duck and beef. The sweetness and sourness of pineapple can just bring out the "freshness" in chicken and duck. Shenwan pineapple chicken and sliced duck with pineapple sauce are even more "interesting".

△ pineapple beef skewers.

But as a city that knows how to eat, how can the old masters in Zhongshan fall into a pattern? Yes, they can also combine pineapple and crispy pomfret to make "crispy pomfret fish balls" and "Shenwan pineapple crispy pomfret". This group of people really only need to put "Zhongshan special" on the public screen.

Unexpectedly, it seems that the two combinations with wide brain holes can really collide with different sparks. "Crispy fish ball" can be regarded as an upgraded version of pine nut fish. First, the crisp fish ball is fried to crisp, and then it is paired with pineapple. When you bite it in one bite, the fish meat is both soft and sour, and it tastes sour and sweet. It is served in half a pineapple, and your index finger moves when you look at it.

△ pineapple+crispy pomfret.

But for supper, the most soothing thing is a dish of "pineapple fried rice". Prepare half a pineapple, dig out the pineapple meat, leave the shell for later use, and then add favorite ingredients such as shrimp, diced meat, eggs, etc. The fried rice out of the pot is clear and golden and attractive, and then put it into half a pineapple shell with the same color, which is a must in terms of flavor and vision.

△ Pineapple fried rice.

In Shenwan, pineapples can be made into dessert snacks in addition to cooking. For example, Shenwan pineapple bag, Shenwan pineapple layer cake, Shenwan pineapple egg, Shenwan pineapple octopus ball, Shenwan pineapple ice …

A pineapple bag with a pineapple is normal in Shenwan. If you meet a freshly baked pineapple bag, and the hot crispy skin bites down, the mouth is full of sweet pineapple granules, which is called "the fairy is hard to return" delicious.

△ pineapple bag with pineapple.

Although the town of Shenwan is unremarkable, there are pineapples in summer and grasses in autumn, which is definitely a "comfortable town on the tip of the tongue". In order to eat pineapple, it’s not a problem to drive, but it’s better to be in May next year.

Original title: "The pineapple in this town, why do you hang the whole country?"

Eat it laxatively, reduce fire, and strengthen the spleen and stomach … This list of Chinese New Year fruits will definitely be used in your home.

The Spring Festival is getting closer and closer. Have you started shopping for new year’s goods?

When it comes to things to be prepared for the New Year, fruits after a meal must be indispensable.

Moreover, this fruit is well chosen, which helps to relieve discomfort such as excessive internal heat, constipation and indigestion. Even relatives and friends should praise you when they visit.

Today, Xiaobian presents you with a list of health fruits. It is right to buy the fruits for the New Year.

Small expert in relaxing bowels: pitaya and apple.

1. Pitaya

Every meal in the New Year is big fish and big meat. Many people are prone to indigestion and constipation, so try the dragon fruit as a "laxative expert"!

Pitaya can relieve constipation, mainly because it is rich in dietary fiber, which can promote intestinal peristalsis and relieve constipation.

Generally speaking, every 100 grams of white-hearted pitaya contains about 2 grams of dietary fiber, and the well-known laxative fruit banana can only reach 1.2 grams. Reminder: Although pitaya is sweet and delicious, it helps to relieve constipation, but don’t be greedy. A medium-sized pitaya has the same calories as a bowl of rice (red pitaya has higher calories), especially for diabetics, so you must eat less.2. AppleAlthough apple looks plain, its laxative ability can’t be underestimated!Apples are rich in pectin, which is a water-soluble dietary fiber. After it enters the intestine, it will absorb a lot of water, which not only keeps the intestine lubricated, but also increases the water content of the stool, softens it and plays a laxative role.

It is worth noting that apples are eaten raw and cooked differently. Raw food can relieve constipation, while cooked food has astringent and antidiarrheal effects.

Therefore, it is suggested that friends with constipation can eat more fresh apples, and friends with diarrhea had better cook the apples to reduce the irritation to the stomach.

Small helper for reducing fire: grapefruit and sugarcane

1. Grapefruit

Winter is the market season of Shatian pomelo. At this time, the pomelo meat is crisp, sweet and delicious, and it is full of water. After a meal, it is easy to digest and get tired.

Pomelo meat is not only delicious, but also has high nutritional value. Traditional Chinese medicine believes that it is sweet and sour, cool in nature, and has the effects of invigorating stomach, eliminating phlegm, clearing heat and reducing fire.

Special reminder: grapefruit should not be eaten during medication! This is because grapefruit contains bergamot, which inhibits the activity of cytochrome enzyme, which plays a key role in drug metabolism. If you eat grapefruit while taking medicine, it may affect drug metabolism, make the drug effect too strong and even cause drug poisoning. Therefore, it is best to read the instructions when taking medicine, or directly avoid eating grapefruit at the same time.2. SugarcaneUnexpectedly, sugarcane, known as the "sugar water warehouse", turned out to be a good hand at clearing away heat and reducing fire!In winter, the climate is dry, the human body is prone to water shortage, and the skin is often dry and peeling. Sugarcane can nourish and moisten dryness and replenish body moisture. Moreover, Chinese medicine believes that sugar cane enters the lung and stomach, which can clear away heat and promote fluid production, nourish the lung and moisten dryness, especially for people with lung heat cough and dry stool. However, sugar cane is high in sugar content and cold, so it is not suitable for people with diabetes, spleen and stomach deficiency and stomach pain.

Special reminder: beware of moldy sugarcane!Moldy sugarcane will produce a neurotoxin, which will damage the central nervous system and digestive system of human body. After eating moldy sugarcane, people may have nausea, vomiting, abdominal pain, diarrhea, etc. In severe cases, it may lead to nervous system poisoning. Tips: If you find that sugarcane meat turns light red, light brown, or has spots and patches, or feels sour, moldy and distiller’s grains, you can’t eat it any more.Little assistant for strengthening spleen and stomach: oranges, papaya1. orangesOranges are cool, sweet and sour, and have the effects of promoting fluid production to quench thirst, appetizing and invigorating qi. In addition, orange peel also has the effect of strengthening the spleen. If you have poor appetite, you can boil water with orange peel to help stimulate your appetite and relieve stomach discomfort. If a meal feels greasy, you can eat an orange after the meal to get rid of it.

Special reminder: when peeling oranges and eating oranges, don’t touch balloons without washing your hands after eating oranges! Aromatic hydrocarbons are hidden on the skins of oranges, oranges, lemons and other citrus fruits. This substance has strong solubility in rubber, which will swell when it comes into contact with balloons, resulting in the thinning of the balloon surface and the increase of stress. Uneven pressure inside the balloon will lead to explosion.2. PapayaThere are two kinds of papaya: green papaya and cooked papaya. We often eat cooked papaya, the flesh is red or yellow, and it is soft and sweet when we bite it down. Traditional Chinese medicine believes that papaya is cold and sweet, which can dispel dampness and stomach, promote digestion and relieve stagnation, nourish spleen and lung, relieve summer heat and quench thirst, and is known as "the fruit of all benefits", "the king of fruits" and "the melon of longevity". more importantly,Papaya contains a unique papain. When eaten with meat, it helps the human body to decompose meat protein and promote digestion. Therefore, eating too much meat and eating papaya can help digestion. In addition, it can also prevent gastroenteritis, gastric ulcer, indigestion and other gastrointestinal discomfort.

Reminder: The carotene in papaya is very high. Eating too much at once will easily make the carotene yellow and turn into "Minions". It is suggested that you should not eat more than 100g of papaya at a time (about half a medium-sized papaya). Papaya glycoside contained in papaya can increase uterine contraction, which is not suitable for pregnant women, and it is best not to eat it for people with allergies and physical weakness. What’s the difference between cherries and cherries with a price difference of 5 times?

Every year near the Spring Festival, cherries are on the market in large quantities. It has high face value, good taste, and the price is hanging most fruits, and it will occupy the hot search position on the Internet from time to time.

However, the relationship between cherries and cherries has puzzled many people, and they can’t figure out the difference between them. The price of cherries is more than ten times that of ordinary cherries. Is the nutrition doubled?

Don’t scratch your head. In this article, let’s take a look at the relationship between cherries and cherries, compare their nutrition, and finally give you some suggestions on buying.

Cherry and cherry
What’s the difference?

To explain this problem, we have to talk about the fruit trees of Prunus in Rosaceae. Among the fruit trees of Prunus, there are mainly four species cultivated in a large area in the world, including China cherry, European sweet cherry, European sour cherry and hairy cherry. Sweet cherry is mainly used as fresh food, China cherry and hairy cherry can be eaten fresh or processed, and sour cherry is mainly used for processing jam, preserved fruit and canned food.

(1) China cherry:Commonly known as cherry and small cherry, it has been cultivated for more than 3000 years, and is known as "the treasure in the fruit" and "the first branch of spring fruit". The fruit is small, round and thin, which is not resistant to storage and convenient to transport.

② European sweet cherry:Also known as the big cherry, this is the "cherry" in everyone’s mouth. The English name from cherry is Cherries, which is transliterated as "cherry".

The fruit is large, colorful, juicy, sweet and delicious, generally heart-shaped or wide-heart-shaped, and the skin is thick and resistant to transportation. Sweet cherry originated in Europe, and was formally cultivated in the 16th century, introduced to the United States in the early 18th century, and cultivated in China in the 1970s. At present, it is cultivated in Yantai, Shandong, Dalian, Liaoning, Beijing and Tianjin.

③ European sour cherry:The fruit is large, about 10mm~20mm in diameter, bright red to dark red in color, native to western Asia and the Black Sea coast. Because of its sour taste, it is mainly used for processing jam, preserved fruit, fruit juice, fruit wine, seasoning and other products, and is rarely eaten directly.

④ Prunus tomentosa:Commonly known as mountain cherry, it is widely distributed in North China, Northwest China and Northeast China. The taste is sour and sweet, and the fruit is small and spherical, with a diameter of about 1cm. There are two kinds of deep red and yellow. Careful observation will reveal that there are short hairs on the fruit.

On the whole, cherries are actually a kind of cherries, and the difference with China cherries is that the varieties are different. It’s just that people are used to calling imported sweet cherries "cherries" and domestic sweet cherries "big cherries".

Cherry VS cherry
Whose nutritional value is higher?

Since cherries and cherries are both cherries, what’s the difference in nutrients between them?

Cherry tastes good, looks good, and has a high price. Some people may wonder if the nutritional value of cherries will be higher if they spend a lot of money on fruits. There are even rumors that "eating cherries can supplement iron and vitamin C."

This may disappoint everyone. The high price is more nutritious. On the whole, there is little difference in nutrition between cherries and common China cherries.

Note: The nutrition data of cherries are from the nutrition database of the United States Department of Agriculture, and the nutrition data of cherries in China are from the Food Composition Table of China. * The dietary fiber of China cherry is insoluble dietary fiber.

-vitamin c:Neither cherries nor China cherries are ideal fruits for vitamin C supplementation. The vitamin C content of cherries is 7mg/100g, which is not as good as that of China cherries (10mg/100g), only 21% of that of oranges (33mg/100g), but better than that of apples (3mg/100g).

-Iron:Cherry fruit is dark red in color, which gives people a feeling of iron supplementation intuitively. But in fact, the iron contents of cherries and cherries are very low, which are 0.36mg/100g and 0.4mg/100g respectively, only about 1/10 of that of lean pork. It is dark red because it is rich in anthocyanins.

-Potassium:Although their vitamin C and iron contents are low, their potassium content is not bad, which is about 230mg per 100 grams. Taking more potassium at ordinary times can help us maintain the health of blood pressure and improve the myocardial contractility.

-Dietary fibre:Compared with China cherry, cherry has thicker skin and higher dietary fiber content of 2.1g/100g, which is beneficial to prevent constipation and protect intestinal health.

-Bioactive ingredients:Cherry contains bioactive components, which have antioxidant effect. Cherry is richer in content, and contains a large number of bioactive components such as phenols, flavonoids and anthocyanins. The phenols in pulp are epicatechin, p-coumaric acid, catechin and rutin, which are all helpful to alleviate the body’s inflammatory reaction and prevent cancer and cardiovascular diseases.

In addition, both of them have low calories and are friendly to blood sugar indexes.

-Low calories:The calories of cherries and China cherries are not high, but the calories of China cherries are relatively lower, which is 46kcal/100g, only 73% of cherries. For friends who need to lose weight, you should control the cherries a little. If you eat 20 at a time, it is almost equivalent to half a bowl of rice.

-Friendly to blood sugar:Cherry’s glycemic index GI is only 22~29, which belongs to low GI food and low GL, and belongs to the fruit with low glycemic load, even if the blood sugar is high, it can be safely eaten.

However, cherries with too dark color may have a relatively high GI, perhaps reaching 63, which belongs to the fruit with medium GI. If the cherries bought are very dark, just eat a few less.

They are all cherries.
Why are cherries so expensive?

China cherries on the market are less than 10 yuan/kg, or even lower, while the price of cherries is as high as hundreds of yuan/kg, even after the price of cherries is halved, it is also tens of yuan/kg. Why are cherries so expensive?

In fact, this is not surprising. First of all, cherries are delicate, have higher requirements for the growth environment, and are somewhat difficult to grow. They grow better in places with less rain, large temperature difference and low humidity.

The climatic conditions abroad are more suitable for planting sweet cherries than in China: the summer temperature is lower, the temperature difference between day and night is large, the rain is less and the humidity is less, which is suitable for the growth of fruit trees, with less pests and diseases, sufficient nutrient accumulation and good quality.

To put it simply, cherries are not as good as China cherries, and it takes a lot of trouble, energy and money to cultivate them.

Moreover, compared with the sweet cherries grown in China, the imported cherries are generally better in taste, bigger in size and crisp and hard in texture, so many people will buy them even if the price is high.

Secondly, after all, the imported cherries are "across the ocean", and the tolls are spent a lot. Some of them are transported by sea, while others are transported by air. The price of cherries transported by sea is cheaper than that transported by air.

Taken together, it is understandable that cherries are expensive.

How to choose cherries and cherries?
Delicious and cost-effective

1 look at the appearance

Choose a sweet cherry with big head, bright color, fullness and luster and soft touch. If it looks like it’s sobbing and it’s soft to hold, it’s basically stale. Under normal circumstances, darker colors will taste better.

2 Look at Guo Bing

First of all, you should choose the green fruit handle, which is fresher. And the shorter the stalk of sweet cherry, the bigger the fruit and the sweeter the taste.

3 players feel heavy.

The edible rate of sweet cherry is positively correlated with fructose content and glucose content. Sweet cherry with large fruit and heavy hand feel has higher edible rate and sweeter fruit.

4 Look at the grade of cherry

If there is a demand for the size of sweet cherries, you can directly ask the merchant the grade of cherries. The classification of imported cherries is generally based on the diameter of the fruit, and "ROW" and "j" are used to distinguish them. The smaller the number, the bigger the fruit. Taking "J" as the standard, the more "J", the bigger the fruit.

Meaning of letters:

G=GIANT huge

P=PREMIUM premium

S=SUPER super

X=EXTRA extra, more

J=JUMBO is larger.

L=LARGE

Although grading can’t be completely equal to whether cherries are delicious or not, the fruit size is often proportional to the development of cherries, so it is often a simple and effective way to choose according to the size. However, the classification of sweet cherries in China is different from that of imported cherries, and the weight of single fruit is often used as the classification standard in China.

If you don’t know what grade of imported cherries you bought, you can compare them with 1 yuan coins. A 1 yuan coin has a diameter of 25mm.

Cherry tastes sweet, but the price is not cheap. It is worth mentioning that potassium supplementation is ok. If you like (yǒu) and (qián), eat it. After all, it can make people feel happy, but don’t eat too much. Be careful to get fat! In addition, it is best to keep it in cold storage and clean up bad fruits in time.

After the crisis, the villagers realized their own shortcomings. In order to broaden their horizons and ideas, they went out of the village and visited various places.
